If you are looking for some very in-depth information and reading on buying, using, and maintaining cast iron cookware, then you’d be hard pressed to do better than this piece:  How To: Cast Iron Skillet Non-Stick and Lasts a Lifetime.  Eliza found this article the other day and thinking, correctly, that I would find it interesting, sent it my way.  While it can be a bit rambling at points, it really does give you, in great detail, about all you need to know about using cast iron cookware.

Cast iron cookware is something that I have become increasingly interested in over the years.  Part of it is the just the appeal of the incredibly solid and sturdy feel of a nice cast iron skillet but another part of it is that there is a lot of evidence supporting these pieces of cookware as being very good at what they do.  Eliza was fortunate to inherit several cast iron skillets, including one massive one, a few years ago, after her grandfather passed away.  While we haven’t used any of them enough to get to that glassy and perfectly seasoned level, we have put them to use, especially for things like cooking bacon (which I almost always do outdoors on our grill now.  For a number of reasons, but one of which is that it is just fun to cook bacon in a cast iron skillet on a grill).

Reading this makes me want to do more with the skillets we have.  I will have to look for some good recipes to try and make the skillets even better.  Looking forward to it now.
